You could set up a delegate for the combo box and implement
controlTextDidEndEditing. Then programatically add the value to your
array controller:

NSManagedObjectContext * context = [[NSApp delegate] managedObjectContext];
NSManagedObject *yourObject = [NSEntityDescription
insertNewObjectForEntityForName: @"entityName" inManagedObjectContext:
context];

[server yourObject:[comboBox stringValue] forKey: @"key"];
