I have added two Core Data tutorials to MacResearch.org:
http://www.macresearch.org/cocoa-scientists-part-xxii-core-data-models
http://www.macresearch.org/cocoa-scientists-part-xxiii-itunes-ifying-core-data-app
They cover the process of building a simple iTunes-like database
application. The app in question is for storing molecular structures,
but could just as easily store other types of data.
I am planning a third tutorial to cover the new Core Data migration
tools in Leopard.
